I think it’s because of the thin skin (after the feathers have been removed), yeah. Also, yes, fish (at least the slabs of it) get sold with the scales on, though I’m pretty sure most of the time those come off during the cooking process one way or another.

Yeah, I figured it was the thin skin, because ham does come with the skin on too sometimes, depending on the cut. Fish is just weird in general though…
